"Middle Eastern Sustainable Recipes You NEED to Try!" is a series of yummy recipes made for a more sustainable future. The Middle East is a diverse region, housing not only many diverse cultures but also tons of flavorful foods. This series highlights some of the most famous (and delicious) recipes of the Middle East.


So, without further ado, let's get cooking!


Mansaf

Jordan's national dish evokes Bedouin traditions. Served on a large platter over khubz (Arabic flatbread) and rice, this dish is eaten communally on important occasions, both happy and sad. No doubt this unique recipe will make your taste buds explode with flavor!


Ingredients:

  • 2 lbs lamb or goat, cut into pieces

  • 1 litre jameed broth

  • Bread


Instructions:

  1. Place meat in pot with jameed broth

  2. Simmer for 2-3 hours until very tender

  3. Serve meat and broth with bread for dipping

Fun Fact: Proper mansaf etiquette dictates eating with your right hand only to show respect for shared food. Leftover broth is considered a prized part of the meal.
