Hello, dessert enthusiasts with a green thumb!

Today, we will be embarking on a delightful journey into the world of sustainable sweets with our Eco-Friendly Banana Oatmeal Cookies. These delicious treats not only satisfy your sweet tooth but also meet all your sustainability needs by using eco-friendly ingredients and minimizing waste.

Ingredients:

  • 2 ripe bananas, mashed

  • 1 1/2 cups rolled oats

  • 1/4 cup nut butter (almond, peanut, or cashew)

  • 1/4 cup raisins or chopped dried fruit

  • 1/4 cup chopped nuts (walnuts, almonds, or pecans)

  • 1 tablespoon maple syrup or honey (optional for added sweetness)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • Pinch of salt

Preparation:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Instructions:

  1. In a mixing bowl, mash the ripe bananas until smooth.

  2. Add the nut butter, maple syrup (if using), vanilla extract, cinnamon, and a pinch of salt. Mix well to combine.

  3. Stir in the rolled oats, raisins (or dried fruit), and chopped nuts until all ingredients are evenly incorporated.

  4. Take spoonfuls of the mixture and form them into small cookie-shaped rounds. Place them onto the prepared baking sheet, leaving space between each cookie.

  5. Bake in the preheated oven for 12-15 minutes or until the edges turn golden brown.

  6. Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Sustainability Tips:

  • Use overripe bananas that might otherwise go to waste. They add natural sweetness and moisture to the cookies.

  • Choose locally sourced nuts, dried fruits, and oats to reduce the carbon footprint associated with transportation.

  • Store these cookies in airtight containers to maintain freshness and minimize food waste.

Savor these Eco-Friendly Banana Oatmeal Cookies guilt-free, knowing you've created a delightful treat while taking a small step towards a more sustainable sweet tooth satisfaction!
