The Middle East is a diverse region, housing not only many diverse cultures but also tons of flavorful foods. This series highlights some of the most famous (and delicious) recipes of the Middle East.


So, without further ado, let's get cooking!


Mujadara (Rice and Lentils)

This comforting dish from Lebanon warms your body and soul. Lentils and rice provide sustenance while highlighting local ingredients. Mujadara is served all across the Middle East, but regardless of where you get it, it always tastes great!


Ingredients:

  • 1 cup brown or green lentils

  • 2 cups rice

  • 3 tablespoons olive oil

  • 1 large onion, diced

  • 4 cloves garlic, minced

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • Salt and pepper to taste

  • Water


Instructions:

  1. Rinse lentils and rice Sauté onion in oil until golden brown

  2. Add garlic, and cook for 1 minute

  3. Add spices and cook for 30 seconds

  4. Add lentils, rice, and water to cover by 1 inch

  5. Bring to boil, reduce heat, and simmer until tender, about 20-30 minutes



Fun Fact: Traditional mujadara uses short-grain rice that clings together rather than separating. This signifies family unity and togetherness.
