Mashed Cauliflower
Do you love mashed potatoes but feel guilty for how unhealthy they are? Mashed cauliflower is the perfect alternative. This easy and healthy recipe tastes wonderful. It is lower in carbs and easier to cook. After trying this dish, you’ll forget about potatoes. Perfect for holidays, you can easily get away with serving mashed cauliflower rather than mashed potatoes. Even if you hate cauliflower, you may still love this dish.

Ingredients: (4 Servings)
1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
½ teaspoon salt
⅛ teaspoon black pepper
OPTIONAL: ¼ cup parmesan cheese
OPTIONAL: 1 tablespoon reduced-fat cream cheese
Step one:
Boil cauliflower for 10 minutes or steam for 15 minutes. Cauliflower is cooked when you can pierce it easily with a fork.
Step two:
Heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
Step three:
Transfer cauliflower into a baking dish. Mash until cauliflower is creamy. Add remaining ingredients with the cauliflower. Mix together, making sure everything is emulsified. Enjoy!
